FSCN5012: Cross Cultural Engagement for Food & Health Equity

3 Credits

This class “flips the script” in that it centers cultural context in applying food and nutrition content, principles, and understandings. Here we use a lens of culture to consider and explore food/nutrition science and health relationships/practices. We emphasize sensitivity to cultural context through experiential learning in community. This class assists learners to navigate culturally different worldviews with equity and more effectively interact in different cultural contexts.
